Grease Traps

Our firm specializes in grease trap design and how to best correct any existing violation you may have with grease traps and DERM.

It is very important that your grease trap permit stays current and that you follow all the new directives from DERM and any other authority having jurisdiction. We understand that you can be extremely busy concentrating on your daily business operations and cannot be on top of all other elements related to your restaurant.

We are here to help you on either correct and existing violation, provide design for a new grease trap interceptor or verifying the existing grease trap capabilities you may have.

As of today, FOG 2.0 is the latest normative being enforced by DERM. FOG stands for Fats, Oils and Grease. There are many parts you need to comply with in the latest FOG 2.0. A good design needs to meet many parts to be approved at DERM. Things we need to know in order to come up with a design are: number of seats at the restaurant, number or turns that you will be providing food on each set, if you use disposable flatware or not, the kind of food you will be serving, etc.

Our job usually starts with all these questions to our clients. After than we do a site visit and start working on floor plans and analyzing all parts in the kitchen or establishment producing grease. We take care of everything, from beginning to end. We want to make sure you are worry free.
